Greek Style Tabouli Salad w/ Quinoa

This a super quick and nutrient dense salad. You could make this as a meal or as a side with fish or chicken.

Parsley is incredibly good for you and is packed with flavour. Most people regard it as a garnish but ignoring this herb is a huge mistake! Parsley contains antioxidant vitamin C which is supportive of our immune system and can be protective against degenerative disease and cancer.

Approximately 90 epidemiologic studies have examined the role of vitamin C or vitamin-C-rich foods in cancer prevention, and the vast majority have found statistically significant protective effects. (Source)

Parsley is also high in Vitamin K which is needed to support healthy bones! I absolutely love this herb and definitely recommend you try it out for a nutrient boost to your diet.

Greek Style Tabouli Salad w/ Quinoa

Ingredients:

  • 1/2 cup chopped cucumber
  • 1/2 cup chopped bell pepper
  • 1/2 cup diced tomatoes (or cherry tomatoes sliced in half)
  • 2 tbsp chopped green onion
  • 1/4 - 1/2 cup chopped parsley (stems removed)
  • 1/4 cup feta cheese crumbled
  • 1/4 cup sliced black olives
  • 1/4 cup cooked quinoa
  • 1/2 lemon juiced
  • 1 -2 tbsp extra virgin olive oil
  • season with sea salt as desired (I went pretty light as the feta and olives were salty already)

Instructions:

  1. Combine all ingredients in a bowl and serve immediately

Notes:

I ate this as a meal for myself and it was VERY filling. You could easily make this a side dish for two.
